White Forest Cake

Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Grease and line two 9-inch round cake pans with parchment paper.
Step 2: Prepare Dry Ingredients
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Step 3: Prepare Wet Ingredients
- In another bowl, cream together the softened butter, eggs, and vanilla extract until smooth and fluffy.
- Add the milk gradually and continue mixing until combined.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients and mix until smooth.
Step 5: Add White Chocolate
- Fold in the white chocolate chips into the batter.
Step 6: Bake the Cake
- Divide the batter evenly into the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Step 7: Prepare the Whipped Cream
- In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Step 8: Assemble the Cake
- Once the cakes are completely cool, slice them in half horizontally to make four layers.
- Place the first cake layer on a serving plate and spread a generous layer of whipped cream on top.
- Sprinkle some maraschino cherries and sliced almonds (if using) over the cream.
- Repeat this process with the remaining layers.
Step 9: Final Decoration
- Frost the top and sides of the cake with the remaining whipped cream.
