Make the Dough:
-In a large bowl, combine wheat flour, methi, curd, spices, seeds, sugar, salt, and oil.
-Mix well and knead into a soft, smooth dough using little water.
-Rest the dough for 15–20 minutes.
Roll Out Theplas:
-Divide dough into small balls.
-Roll each into a thin circle like a roti, about 6–7 inches wide.
-Dust with flour to avoid sticking.
Cook:
-Heat a tawa (griddle). Place the thepla on it.
-Cook both sides on medium heat until golden brown spots appear.
-Apply a bit of oil/ghee on both sides while roasting.
Serve Hot With:
-Pickle + curd = classic combo
