For thepla:
- 2 cups whole wheat flour
- 1 cup fresh methi β finely chopped
- 2 tbsp curd (yogurt)
- 1 tsp ginger-garlic-green chili paste
- Β½ tsp turmeric powder
- Β½ tsp red chili powder
- 1 tsp cumin seeds
- 1 tsp ajwain (carom seeds) β optional, helps digestion
- 1 tsp sesame seeds
- 1β2 tsp sugar β traditional touch
- Salt to taste
- 2 tbsp oil
- Water as needed
- Oil or ghee for cooking

- Make the Dough:
- -In a large bowl, combine wheat flour, methi, curd, spices, seeds, sugar, salt, and oil.
- -Mix well and knead into a soft, smooth dough using little water.
- -Rest the dough for 15β20 minutes.
- Roll Out Theplas:
- -Divide dough into small balls.
- -Roll each into a thin circle like a roti, about 6β7 inches wide.
- -Dust with flour to avoid sticking.
- Cook:
- -Heat a tawa (griddle). Place the thepla on it.
- -Cook both sides on medium heat until golden brown spots appear.
- -Apply a bit of oil/ghee on both sides while roasting.
- Serve Hot With:
- -Pickle + curd = classic combo
