INGREDIENTS
- 250g paneer (cubed)
- 2 tbsp ghee or oil
- 1 bay leaf
- 2 green cardamoms
- 1/2 inch cinnamon stick
- 1 onion (finely chopped)
- 1 tsp ginger-garlic paste
- 2 tomatoes (pureed)
- 10-12 cashews (soaked)
- 2 tbsp cream
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 1 tsp sugar
Recipe
- Step 1: Prepare Cashew Paste
- - Blend soaked cashews into a smooth paste with a little water and keep aside.
- Step 2: Cook Base Masala
- - Heat ghee or oil in a pan. Add bay leaf, cardamoms, and cinnamon stick. Sauté for a few seconds.
- - Add chopped onions and sauté until golden.
- - Add ginger-garlic paste and cook till raw smell disappears.
- Step 3: Add Tomatoes and Spices
- - Pour in tomato puree and cook until oil separates.
- - Add turmeric, red chili, coriander powder, salt, and sugar. Mix well.
- Step 4: Add Cashew Paste and Cream
- - Stir in cashew paste and cook for 2-3 minutes.
- - Add cream and mix gently. Let it simmer on low heat.
- Step 5: Finish with Paneer
- - Add paneer cubes and garam masala. Mix carefully to coat paneer well.
- - Simmer for 5 minutes. Remove whole spices if desired. Serve hot with naan or pulao.
