Step 1: Prepare Cashew Paste
- Blend soaked cashews into a smooth paste with a little water and keep aside.
Step 2: Cook Base Masala
- Heat ghee or oil in a pan. Add bay leaf, cardamoms, and cinnamon stick. Sauté for a few seconds.
- Add chopped onions and sauté until golden.
- Add ginger-garlic paste and cook till raw smell disappears.
Step 3: Add Tomatoes and Spices
- Pour in tomato puree and cook until oil separates.
- Add turmeric, red chili, coriander powder, salt, and sugar. Mix well.
Step 4: Add Cashew Paste and Cream
- Stir in cashew paste and cook for 2-3 minutes.
- Add cream and mix gently. Let it simmer on low heat.
Step 5: Finish with Paneer
- Add paneer cubes and garam masala. Mix carefully to coat paneer well.
- Simmer for 5 minutes. Remove whole spices if desired. Serve hot with naan or pulao.
