Red Velvet Cupcakes

Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
Step 2: Mix Dry Ingredients
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
Step 3: Mix Wet Ingredients
- In a large bowl, whisk together the buttermilk, vegetable oil, egg, red food coloring, vanilla extract, and vinegar until well combined.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Step 5: Fill Cupcake Liners
- Divide the batter evenly among the cupcake liners, filling each about 2/3 of the way full.
Step 6: Bake the Cupcakes
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Step 7: Frost and Serve
- Once the cupcakes have cooled, frost them with cream cheese frosting or your preferred frosting.
