Step 1: Roast the Rava
-In a dry pan, lightly roast the rava (semolina) until it turns slightly golden. Set aside.

Step 2: Prepare Tempering
-In the same pan, heat ghee or oil. Add mustard seeds, cumin seeds, urad dal, and curry leaves.

Step 3: Add Vegetables
-Now, add finely chopped onions, green chilies, and mixed vegetables.
-Saute them for 3-4 minutes until they soften.
Step 4: Add Water and Spices
-Add 2 cups of water, turmeric powder, and salt. Bring it to a boil.
Step 5: Add Rava
-Slowly add the roasted rava while stirring continuously to avoid lumps.
-until the mixture thickens.
Step 6: Cook and Garnish
-Cover the pan and cook for 3-4 minutes on low flame until the rava absorbs all the water.
-Garnish with roasted cashews and fresh coriander leaves.
Step 7: Serve
-Serve hot with coconut chutney, pickle, or yogurt on the side.
