Rava Upma with Vegetables

For Rava Upma with Vegetables:
- 1 cup rava (semolina/sooji)
- 2 tbsp ghee or oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 1β2 green chilies, chopped
- 1-inch piece of ginger, finely chopped
- 1 medium onion, finely chopped
- 8β10 curry leaves
- 1 small carrot, diced
- 6β8 French beans, chopped
- 1/4 cup green peas (fresh or frozen)
- 2.5 cups hot water (adjust for consistency)
- Salt to taste
- Fresh coriander leaves β for garnish
- Cashews β 6 to 8 (optional β fried in ghee)
- A pinch of hing (asafoetida) β optional

- Step 1: Roast the Rava
- -In a dry pan, lightly roast the rava (semolina) until it turns slightly golden. Set aside.
- - helps prevent the rava from becoming sticky.
- Step 2: Prepare Tempering
- -In the same pan, heat ghee or oil. Add mustard seeds, cumin seeds, urad dal, and curry leaves.
- -Let them splutter.
- Step 3: Add Vegetables
- -Now, add finely chopped onions, green chilies, and mixed vegetables.
- -Saute them for 3-4 minutes until they soften.
- Step 4: Add Water and Spices
- -Add 2 cups of water, turmeric powder, and salt. Bring it to a boil.
- Step 5: Add Rava
- -Slowly add the roasted rava while stirring continuously to avoid lumps.
- -until the mixture thickens.
- Step 6: Cook and Garnish
- -Cover the pan and cook for 3-4 minutes on low flame until the rava absorbs all the water.
- -Garnish with roasted cashews and fresh coriander leaves.
- Step 7: Serve
- -Serve hot with coconut chutney, pickle, or yogurt on the side.
