Poha Preparation
1️⃣ Prep the Poha:
- Rinse poha gently in a strainer under running water.
- Let it sit for 5–10 mins to soften. (Don’t soak too long!)
- Fluff with a fork and mix in turmeric, salt, and sugar.
2️⃣ Cook the Base:
- Heat oil in a pan.
- Add mustard seeds → let them splutter.
- Add cumin seeds, then peanuts. Roast until golden and crunchy.
- Add curry leaves, green chilies, and then onions.
- Sauté onions till soft and slightly golden.
3️⃣ Add Poha:
- Now add the fluffed poha into the pan.
- Mix gently. Cook for 2–3 mins on low flame.
- Adjust salt and spice as needed.
- Turn off heat and squeeze in lemon juice.
4️⃣ Garnish & Serve:
- Garnish with fresh coriander leaves and optional grated coconut.
- Serve hot with masala chai or buttermilk on the side.
