🧺 Ingredients:
- 1½ cups thick poha (flattened rice)
- 1 medium onion – finely chopped
- 1–2 green chilies – finely chopped
- 8–10 curry leaves
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tbsp peanuts (optional but tasty!)
- ¼ tsp turmeric powder
- Salt – to taste
- 1 tsp sugar (optional)
- 2 tbsp oil
- 2 tbsp fresh coriander leaves – chopped
- Juice of ½ lemon
- Grated coconut (optional, for garnish)
👩🍳Recipe
- 1️⃣ Prep the Poha:
- - Rinse poha gently in a strainer under running water.
- - Let it sit for 5–10 mins to soften. (Don’t soak too long!)
- - Fluff with a fork and mix in turmeric, salt, and sugar.
- 2️⃣ Cook the Base:
- - Heat oil in a pan.
- - Add mustard seeds → let them splutter.
- - Add cumin seeds, then peanuts. Roast until golden and crunchy.
- - Add curry leaves, green chilies, and then onions.
- - Sauté onions till soft and slightly golden.
- 3️⃣ Add Poha:
- - Now add the fluffed poha into the pan.
- - Mix gently. Cook for 2–3 mins on low flame.
- - Adjust salt and spice as needed.
- - Turn off heat and squeeze in lemon juice.
- 4️⃣ Garnish & Serve:
- - Garnish with fresh coriander leaves and optional grated coconut.
- - Serve hot with masala chai or buttermilk on the side.
