Pineapple Upside Down Cake
INGREDIENTS
- 1 can (20 oz) pineapple slices, drained (reserve juice)
- 1/4 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
- 6 maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/4 cup pineapple juice (reserved from can)

- Step 1: Prepare the Pan
- - Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- - In the prepared pan, melt 1/4 cup of butter in the oven as it preheats.
- - Once melted, remove from the oven and evenly sprinkle 3/4 cup of brown sugar over the butter.
- - Arrange the pineapple slices on top of the brown sugar in a circular pattern.
- - place a maraschino cherry in the center of each pineapple slice.
- Step 2: Make the Cake Batter
- - In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
- - Beat in the eggs, one at a time, followed by the vanilla extract.
- - Gradually add the dry ingredients to the wet ingredients, alternating with the milk and pineapple juice.

- Step 3: Assemble the Cake
- - Pour the cake batter evenly over the arranged pineapple slices in the pan.
- - Spread the batter gently with a spatula to ensure even coverage.
- Step 4: Bake the Cake
- - Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- - Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
- Step 5: Flip the Cake
- - After the cake has cooled slightly, run a knife around the edges of the cake to loosen it from the pan.
