- Once melted, remove from the oven and evenly sprinkle 3/4 cup of brown sugar over the butter.
- Arrange the pineapple slices on top of the brown sugar in a circular pattern.
- place a maraschino cherry in the center of each pineapple slice.
Step 2: Make the Cake Batter
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.

- Gradually add the dry ingredients to the wet ingredients, alternating with the milk and pineapple juice.
- beginning and ending with the dry ingredients. Mix until just combined.
Step 3: Assemble the Cake
- Pour the cake batter evenly over the arranged pineapple slices in the pan.
- Spread the batter gently with a spatula to ensure even coverage.
Step 4: Bake the Cake
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
Step 5: Flip the Cake
- After the cake has cooled slightly, run a knife around the edges of the cake to loosen it from the pan.
- Carefully invert the cake onto a serving plate.
- Allow the pan to sit for a few moments before lifting it off to reveal the pineapple upside-down pattern.
Step 6: Serve and Enjoy
- Serve the cake warm or at room temperature.
- It can be enjoyed as is or topped with whipped cream or ice cream for an extra treat!
