Step 1: Soak the Dal
-Wash the chana dal thoroughly and soak it in water for at least 2 hours. Drain completely before grinding.
Step 2: Grind the Dal
-Grind the soaked dal coarsely (not into a fine paste). Do not add water while grinding.
- Keep a few whole dal grains for a nice texture.
Step 3: Prepare the Mixture
-Transfer the ground dal into a bowl.
- Add chopped onions/shallots, green chilies, ginger, curry leaves, fennel seeds , and salt. Mix everything well.
Step 4: Shape the Vadas
-Take small portions of the mixture and flatten them into small patties using your palm.
- Wet your hands if needed to avoid sticking.
Step 5: Fry the Vadas
-Heat oil in a kadai on medium flame. Gently slide the shaped vadas into the oil.
- in batches till golden brown and crispy, flipping them once in between.
Step 6: Drain and Serve
-Remove vadas onto paper towels to remove excess oil.
