π Ingredients
For Vada:
- 1 cup Chana Dal (Bengal gram) β soaked for 2 hours
- 1β2 Green Chilies β finely chopped
- 1 tsp Ginger β finely chopped
- 2β3 Shallots or 1 small Onion β finely chopped
- 1β2 sprigs Curry Leaves β finely chopped
- 1/2 tsp Fennel Seeds (optional, for added aroma)
- Salt β to taste
- Oil β for deep frying

- Step 1: Soak the Dal
- -Wash the chana dal thoroughly and soak it in water for at least 2 hours. Drain completely before grinding.
- Step 2: Grind the Dal
- -Grind the soaked dal coarsely (not into a fine paste). Do not add water while grinding.
- - Keep a few whole dal grains for a nice texture.
- Step 3: Prepare the Mixture
- -Transfer the ground dal into a bowl.
- - Add chopped onions/shallots, green chilies, ginger, curry leaves, fennel seeds , and salt. Mix everything well.
- Step 4: Shape the Vadas
- -Take small portions of the mixture and flatten them into small patties using your palm.
- - Wet your hands if needed to avoid sticking.
- Step 5: Fry the Vadas
- -Heat oil in a kadai on medium flame. Gently slide the shaped vadas into the oil.
- - in batches till golden brown and crispy, flipping them once in between.
- Step 6: Drain and Serve
- -Remove vadas onto paper towels to remove excess oil.
- - hot with coconut chutney or plain tea for that classic Kerala snack experience.
