For Dough:
- 2 cups whole wheat flour
- Salt to taste
- Water – to knead
- 1 tsp oil or ghee
For Paneer Stuffing:
- 1.5 to 2 cups grated paneer
- 1–2 green chilies – finely chopped
- 1 tsp ginger, grated
- ½ tsp cumin seeds or ajwain
- ½ tsp red chili powder
- ½ tsp garam masala
- 1–2 tbsp chopped coriander
- Salt to taste
- Ghee, oil, or butter – for frying the parathas
- ¼ tsp turmeric powder
- 1 small onion, finely chopped

- Make Dough:
- -Mix whole wheat flour with salt, water, and a little oil to form a soft dough.
- -Knead for 5–6 mins, cover, and rest it for 20–30 mins.
- Make Paneer Filling:
- -Mix grated paneer with all spices, herbs, and onion (if using).
- -Ensure it’s dry, lump-free, and well-seasoned.
- Roll and Stuff:
- -Take a dough ball, roll into a 4–5 inch circle.
- -Place 2 tbsp paneer filling in the center.
- -Bring edges together like a pouch and seal.
- -Flatten gently and roll into a ~6–7 inch paratha. Be gentle to avoid tearing.
- Cook:
- -Heat a tawa (griddle) on medium-high.
- -Place paratha, cook until light brown spots appear.
- -Flip, apply ghee/oil, and cook both sides until golden and slightly crispy.
