Step 1: Prepare the Stuffing
- In a bowl, mix mashed boiled potatoes, boiled chickpeas, chopped onions.
- red chili powder, roasted cumin powder, chaat masala, and ginger-garlic paste.
- Add salt to taste and mix well. Adjust spices based on your preference.
- Garnish with fresh coriander leaves and set aside.
Step 2: Prepare the Pani (Spicy Water)
- In a blender, add tamarind pulp, green chilies, ginger, black salt, roasted cumin powder
- and a handful of coriander leaves.
- Blend it all together, then strain the mixture to remove solid bits.
- Pour the strained liquid into a large bowl, add cold water, and adjust salt and spice as needed.
- If you prefer it chilled, add a few ice cubes to the pani.
Step 3: Prepare the Puri
- If using store-bought puris, make a small hole in the center of each puri, making sure it’s large enough to fill.
- Be gentle while handling the puris to avoid breaking them.
Step 4: Assemble the Pani Puri
- Stuff each puri with a spoonful of the potato-chickpea filling.
- Once filled, dip the puri into the spicy pani (water) and serve immediately.
- Serve with extra pani on the side for more dips!
Step 5: Serve & Enjoy!
- Enjoy the crunchy, spicy, tangy explosion of flavors in each bite!
- Add extra tamarind chutney for an additional sweet-spicy kick.
Bonus Tips:
- Make sure the pani is chilled for an authentic refreshing taste.
- You can adjust the number of chilies based on how spicy you want the pani to be.
- For the perfect crunch, prepare the puris just before serving.
