Step 1: Marinate the Paneer
- In a bowl, mix curd, red chili powder, turmeric, garam masala, cumin powder.
- ginger-garlic paste, lemon juice, and salt.
- Add paneer cubes and coat well. Let it marinate for at least 30 minutes.
Step 2: Grill the Paneer
- Heat a grill pan or tawa with a little oil.
- Grill marinated paneer cubes till golden and slightly charred. Set aside.
Step 3: Prepare the Gravy Base
- Heat oil or butter in a pan. Add chopped onions and sauté till golden brown.
- Add ginger-garlic paste and sauté till raw smell disappears.
- Pour in tomato puree and cook till oil separates.
- Add turmeric, chili powder, and salt. Mix well.
Step 4: Add Cashew Paste and Cream
- Add cashew paste and cook for 2-3 minutes.
- Add fresh cream and mix until the gravy becomes rich and creamy.
- Sprinkle kasuri methi and sugar (if using) and mix.
Step 5: Combine and Serve
- Gently add grilled paneer tikka cubes into the gravy and simmer for 5 minutes.
- Garnish with fresh coriander and serve hot with naan, roti, or jeera rice.
