INGREDIENTS
- 250g paneer (cubed)
- 1/2 cup thick curd (for marination)
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp roasted cumin powder
- 1 tbsp ginger-garlic paste
- 1 tbsp lemon juice
- Salt to taste
- 1 tbsp oil (for grilling)
- 1 onion (finely chopped)
- 2 tomatoes (pureed)
- 8-10 cashews (soaked and blended into a paste)
- 1/2 cup fresh cream
- 1/2 tsp kasuri methi (crushed)
- 2 tbsp oil or butter (for gravy)
- 1/2 tsp sugar (optional)
- Coriander leaves (for garnish)
Recipe
- Step 1: Marinate the Paneer
- - In a bowl, mix curd, red chili powder, turmeric, garam masala, cumin powder.
- - ginger-garlic paste, lemon juice, and salt.
- - Add paneer cubes and coat well. Let it marinate for at least 30 minutes.
- Step 2: Grill the Paneer
- - Heat a grill pan or tawa with a little oil.
- - Grill marinated paneer cubes till golden and slightly charred. Set aside.
- Step 3: Prepare the Gravy Base
- - Heat oil or butter in a pan. Add chopped onions and sauté till golden brown.
- - Add ginger-garlic paste and sauté till raw smell disappears.
- - Pour in tomato puree and cook till oil separates.
- - Add turmeric, chili powder, and salt. Mix well.
- Step 4: Add Cashew Paste and Cream
- - Add cashew paste and cook for 2-3 minutes.
- - Add fresh cream and mix until the gravy becomes rich and creamy.
- - Sprinkle kasuri methi and sugar (if using) and mix.
- Step 5: Combine and Serve
- - Gently add grilled paneer tikka cubes into the gravy and simmer for 5 minutes.
- - Garnish with fresh coriander and serve hot with naan, roti, or jeera rice.
