Step 1: Make Tomato-Cashew Paste
- Boil chopped tomatoes and cashews with little water for 5 minutes. Let it cool.
- Blend into a smooth paste and set aside.
Step 2: Sauté Onions
- Heat butter in a pan. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook until raw smell disappears.
Step 3: Prepare the Gravy
- Add the tomato-cashew paste and cook till oil separates.
- Add turmeric, chili powder, cumin, coriander powder, and salt. Mix well and cook for a few minutes.
- Add water to adjust consistency as needed. Simmer for 5 minutes.
Step 4: Add Paneer and Finish
- Add paneer cubes and simmer for 4–5 minutes.
- Stir in garam masala, kasuri methi, and fresh cream. Mix gently.
Step 5: Garnish and Serve
- Garnish with coriander leaves and a drizzle of cream.
- Serve hot with naan, kulcha, or jeera rice.
