INGREDIENTS
- 250g paneer (cubed)
- 2 onions (finely sliced)
- 1/2 cup yogurt (well whisked)
- 1/4 cup fresh cream
- 1 tbsp ginger-garlic paste
- 2 tbsp cashew nuts (soaked and blended to paste)
- 1 tsp poppy seeds (optional, soaked and ground)
- 1/2 tsp cumin seeds
- 2 green cardamoms
- 1 small cinnamon stick
- 2 cloves
- 1 bay leaf
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp ghee or oil
- Fresh coriander or mint for garnish
Recipe
- Step 1: Prepare the Base
- - Heat ghee in a pan. Add cumin, cardamom, cinnamon, cloves, and bay leaf.
- - Add sliced onions and sauté till golden brown.
- - Add ginger-garlic paste and cook till raw smell fades.
- Step 2: Make the Masala
- - Add turmeric, coriander powder, and a little water.
- - Add cashew-poppy paste and mix well. Cook for 2–3 minutes.
- - Lower the flame and add whisked yogurt slowly, stirring constantly.
- Step 3: Add Paneer and Cream
- - Add paneer cubes and mix gently. Cook for 5 minutes on low heat.
- - Pour in the fresh cream and stir. Sprinkle garam masala.
- Step 4: Garnish and Serve
- - Garnish with fresh mint or coriander. Serve hot with naan, pulao, or paratha.
