Step 1: Blanch and Blend Spinach
- Boil water and blanch the spinach for 2-3 mins. Drain and transfer to ice water immediately.
- Blend the spinach with green chilies into a smooth puree. Keep aside.
Step 2: Prepare Masala
- Heat oil in a pan. Add cumin seeds. Once they splutter, add chopped onions and sauté until golden.
- Add ginger-garlic paste and cook till raw smell disappears.
- Add chopped tomatoes and turmeric. Cook until tomatoes are soft.
Step 3: Add Spinach Puree
- Add the palak puree to the pan. Cook for 4–5 minutes on low flame. Add salt and garam masala.
Step 4: Add Paneer
- Add paneer cubes and simmer for 3-4 minutes. Mix gently.
- Stir in fresh cream if using for a richer taste.
Step 5: Serve
- Serve hot with roti, naan, jeera rice or paratha.
