INGREDIENTS
- 250g paneer (cubed)
- 2 bunches of fresh spinach (palak)
- 1 onion (chopped)
- 2 tomatoes (chopped)
- 1 tsp ginger-garlic paste
- 1-2 green chilies
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala
- 2 tbsp fresh cream (optional)
- 1 tbsp oil or ghee
- Salt to taste
Recipe
- Step 1: Blanch and Blend Spinach
- - Boil water and blanch the spinach for 2-3 mins. Drain and transfer to ice water immediately.
- - Blend the spinach with green chilies into a smooth puree. Keep aside.
- Step 2: Prepare Masala
- - Heat oil in a pan. Add cumin seeds. Once they splutter, add chopped onions and sauté until golden.
- - Add ginger-garlic paste and cook till raw smell disappears.
- - Add chopped tomatoes and turmeric. Cook until tomatoes are soft.
- Step 3: Add Spinach Puree
- - Add the palak puree to the pan. Cook for 4–5 minutes on low flame. Add salt and garam masala.
- Step 4: Add Paneer
- - Add paneer cubes and simmer for 3-4 minutes. Mix gently.
- - Stir in fresh cream if using for a richer taste.
- Step 5: Serve
- - Serve hot with roti, naan, jeera rice or paratha.
