Mishti Doi

INGREDIENTS

Boil & Reduce Milk:
-Bring 1 liter milk to a boil.
-Simmer and stir often until it reduces to about ¾ liter (thickens slightly).
Caramelize the Sugar:
-In a separate pan, melt ¾ cup of sugar on low heat until it turns golden brown.
-Carefully add 2 tbsp of water to make a caramel syrup.
Mix Together:
-Slowly stir the hot caramel into the reduced milk.
-Let the mixture cool till it's just warm (not hot!).
Add Yogurt Starter:
-Whisk in 2 tbsp of plain yogurt.
-Mix gently and pour into clay pots (for authentic texture & flavor).
Set the Doi:
-Cover and keep it in a warm place overnight (6–10 hours).
-Clay pots help absorb moisture and thicken the doi.
Chill & Serve:
-Refrigerate for a few hours.
-Serve chilled with a sprinkle of cardamom powder or saffron strands.
