INGREDIENTS
For Mishti Doi:
- 1 liter full-fat milk
- 1 cup sugar
- 2 tbsp plain yogurt
- A few saffron strands
- a pinch of cardamom powder for flavor
👩🍳Recipe
- Boil & Reduce Milk:
- -Bring 1 liter milk to a boil.
- -Simmer and stir often until it reduces to about ¾ liter (thickens slightly).
- Caramelize the Sugar:
- -In a separate pan, melt ¾ cup of sugar on low heat until it turns golden brown.
- -Carefully add 2 tbsp of water to make a caramel syrup.
- Mix Together:
- -Slowly stir the hot caramel into the reduced milk.
- -Let the mixture cool till it's just warm (not hot!).
- Add Yogurt Starter:
- -Whisk in 2 tbsp of plain yogurt.
- -Mix gently and pour into clay pots (for authentic texture & flavor).
- Set the Doi:
- -Cover and keep it in a warm place overnight (6–10 hours).
- -Clay pots help absorb moisture and thicken the doi.
- Chill & Serve:
- -Refrigerate for a few hours.
- -Serve chilled with a sprinkle of cardamom powder or saffron strands.
