🧺 For Boiling the Peas:

1️⃣ Cook the Peas:

Drain soaked peas.
Pressure cook with 3 cups water, salt, turmeric, and hing for 4–5 whistles
Drain excess water (reserve a little if you like a semi-gravy texture).

2️⃣ Prepare the Chaat:

In a large mixing bowl, take the cooked peas.
Add onions, tomatoes, green chilies, ginger.
Add chaat masala, cumin powder, red chili powder, black salt, and a little regular salt if needed.
Add lemon juice, tamarind chutney, and green chutney. Mix well.

💡 Taste and adjust: Want it spicier? More chilies. More tangy? Squeeze in extra lemon or chutney.

3️⃣ Final Garnish:

Top with fresh coriander.
Sprinkle sev/papdi/boondi for crunch (optional but 👌).
Serve warm or room temp.
