Vada with Gongura Chutney

Step 1: Dry Roast the Rava
In a pan, dry roast the rava on low heat till it turns aromatic. Remove and keep aside.
Step 2: Prepare Tempering
Heat oil and ghee in a pan. Add mustard seeds, let them splutter. Add urad dal, chana dal and fry till golden.
Step 3: Add Aromatics
Add chopped green chilies, red chili, curry leaves, and grated ginger. Sauté for a few seconds.
Step 4: Add Veggies
Add chopped onions and sauté till translucent. Then add tomatoes, carrots, and beans. Cook for 3–4 minutes till veggies soften.
Step 5: Spices & Water
Add turmeric and salt. Pour in hot water carefully and bring it to a boil.
Step 6: Cook the Rava
Slowly add the roasted rava while stirring continuously to avoid lumps. Cover and cook on low flame for 3–4 minutes.
Step 7: Final Touch
Once done, mix well. Garnish with coriander, coconut (optional), and a squeeze of lemon juice.
