Idiyappam with Coconut Milk
📝 Ingredients
For Idiyappam:
- 1 cup rice flour (roasted)
- 1¼ cup boiling water
- Salt to taste
- 1 tsp coconut oil (optional)
Coconut Milk:
- 1½ cups thick coconut milk (fresh or canned)
- ¼ cup sugar (adjust to taste)
- ¼ tsp cardamom powder
- A pinch of salt

- Step 1: Prepare the Idiyappam Dough
- -Boil water and add salt + coconut oil. Pour over rice flour in a bowl.
- -Mix quickly using a spoon, then knead into a smooth, soft dough once cool enough.
- Step 2: Shape the Idiyappam
- -Grease idli plates or steamer plates. Fill dough into an idiyappam press or sev maker.
- -Press out thin noodles in spiral shapes onto plates.
- Step 3: Steam the Idiyappam
- -Steam for 8–10 minutes until cooked and soft. Remove and keep warm.
- Step 4: Prepare Coconut Milk
- -In a bowl, mix coconut milk, sugar, cardamom, and a pinch of salt. Stir till sugar dissolves.
- -Optional: Warm it gently for a cozy feel, or serve chilled for a refreshing taste.
- Step 5: Serve
- -Pour coconut milk over warm Idiyappam and enjoy as a light, comforting Kerala breakfast or dessert!
