INGREDIENTS
- 1 medium-sized cauliflower (gobi), cut into small florets
- 2 tablespoons cornflour (cornstarch)
- 2 tablespoons all-purpose flour (maida)
- 1 tablespoon rice flour (optional, for extra crispiness)
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon soy sauce
- Salt to taste
- Oil for frying
- 1 tablespoon oil (for stir-frying)
- 1 small onion, finely chopped
- 1 bell pepper (capsicum), finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon tomato ketchup
- 1 teaspoon green chili sauce (optional, for heat)
- 1 tablespoon vinegar
- 1/4 teaspoon sugar
- Spring onions for garnish
Recipe
- Step 1: Prepare the Gobi (Cauliflower)
- - Wash and cut the cauliflower into bite-sized florets.
- - Blanch the florets in hot water for 2-3 minutes to remove any impurities, then drain and set aside to cool.
- Step 2: Make the Batter
- - In a mixing bowl, combine cornflour, all-purpose flour, rice flour, ginger-garlic paste,
- - red chili powder, turmeric powder, soy sauce, and salt.
- - Add water little by little to make a thick batter that coats the florets well.
- Step 3: Fry the Gobi
- - Heat oil in a deep frying pan over medium heat.
- - Dip each cauliflower floret into the batter and fry in batches until golden brown and crispy.
- - Remove from oil and set aside on paper towels to absorb excess oil.
- Step 4: Stir-fry the Vegetables
- - In a separate pan, heat 1 tablespoon oil on medium-high heat.
- - Add chopped onions and bell pepper, and stir-fry for 2-3 minutes until they are slightly tender but still crunchy.
- Step 5: Make the Sauce
- - To the stir-fried vegetables, add soy sauce, tomato ketchup,
- - green chili sauce (if using), vinegar, and sugar. Stir well.
- - Cook for another 2 minutes to combine the flavors.
- Step 6: Combine the Gobi with Sauce
- - Add the crispy fried cauliflower florets to the sauce mixture and toss gently to coat them with the sauce.
- Step 7: Garnish and Serve
- - Garnish with chopped spring onions.
