Prepare the Filling:
-Heat oil in a pan. Add Dabeli masala, tamarind chutney, and a few spoons of water.
-Stir in mashed potatoes and salt.
-Cook for a couple of minutes till everything mixes well and gets aromatic.
-Spread it on a plate and press gently. Garnish with peanuts, pomegranate, sev, coriander.
Assemble the Dabeli:
-Slice pav buns, butter and toast slightly.
-Spread garlic chutney on one side, sweet chutney on the other.
-Place a portion of potato masala inside.
-Top with sev, more peanuts, pomegranate, and some green chutney if you like extra zing.
Toast & Serve:
-Press the pav gently.
-Toast lightly again with butter (optional but 👌).
-Serve hot with extra chutney or fried green chilies.
