Chocolate Truffle cake

Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper.
Step 2: Prepare the Dry Ingredients
- In a large bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
Step 3: Mix Wet Ingredients
- In another bowl, whisk together the sugar, eggs, melted butter, milk, and vanilla extract until smooth.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the wet ingredients to the dry ingredients, mixing well until the batter is smooth and combined.
- Stir in the hot water (the batter will be thin).
Step 5: Bake the Cake
- Pour the batter evenly into the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 6: Make the Chocolate Ganache
- In a heatproof bowl, break the dark chocolate into small pieces.
- Heat the heavy cream in a saucepan over medium heat until it just begins to simmer.
- Pour the hot cream over the chocolate and let it sit for 5 minutes, then whisk until smooth.
- Let the ganache cool to room temperature before using it.
Step 7: Assemble the Cake
- Once the cakes have completely cooled, place one layer on a serving plate.
- Spread a layer of ganache over the top. Place the second cake layer on top, and cover the entire cake with the remaining ganache.
Step 8: Chill and Serve
- Allow the cake to chill in the refrigerator for at least 30 minutes to set the ganache.
- Slice and serve your decadent chocolate truffle cake!
