Step 1: Prepare the Appam Batter
-Soak raw rice for 4–5 hours, drain, and grind with cooked rice and grated coconut into a smooth batter.
- Add water to get a thick consistency.
-Add yeast, sugar, and salt to the batter and mix well. Let it ferment for 2 hours.
Step 2: Prepare the Vegetable Stew
-Heat oil, add mustard seeds, fennel seeds, cloves, cardamom, and cinnamon. Let them splutter.
-Add onions, green chilies, ginger, and garlic. Sauté until golden brown.
-Add mixed vegetables and sauté for 2-3 minutes.
-Pour thin coconut milk and simmer until vegetables are cooked.
