Appam with Vegetable Stew
📝 Ingredients
Ingredients for Appam:
- 1 cup raw rice
- ÂĽ cup cooked rice
- ½ cup grated coconut
- ½ tsp yeast
- 1 tsp sugar
- 1 ½ cups water (adjust as needed)
- 1 ½ tsp salt
Ingredients for Vegetable Stew:
- 1 cup mixed vegetables (carrot, potato, beans, peas, cauliflower)
- 1 large onion, thinly sliced
- 2 green chilies, slit
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tsp mustard seeds
- 1 tsp fennel seeds
- 2–3 cloves
- 2–3 cardamom pods
- 1 cinnamon stick
- 1 cup coconut milk (thick)
- 1 cup coconut milk (thin)
- Salt to taste
- 2 tbsp oil
- A few curry leaves

- Step 1: Prepare the Appam Batter
- -Soak raw rice for 4–5 hours, drain, and grind with cooked rice and grated coconut into a smooth batter.
- - Add water to get a thick consistency.
- -Add yeast, sugar, and salt to the batter and mix well. Let it ferment for 2 hours.
- Step 2: Prepare the Vegetable Stew
- -Heat oil, add mustard seeds, fennel seeds, cloves, cardamom, and cinnamon. Let them splutter.
- -Add onions, green chilies, ginger, and garlic. Sauté until golden brown.
- -Add mixed vegetables and sauté for 2-3 minutes.
- -Pour thin coconut milk and simmer until vegetables are cooked.
- - thick coconut milk and curry leaves. Simmer for 5–10 minutes.
- -Add salt to taste.
- Step 3: Cook the Appam
- -Heat an appam pan or non-stick pan.
- - Pour a ladle of batter, swirl the pan, and cover to cook until the edges are golden and the center
remains soft.
- Step 4: Serve
- -Serve the appams with hot vegetable stew. Enjoy your meal!
