INGREDIENTS
- 4 eggs (boiled)
- 3 eggs (raw)
- 2 medium onions (finely chopped)
- 2 tomatoes (finely chopped)
- 2 green chilies (chopped)
- 1 tbsp ginger-garlic paste
- 1/4 cup capsicum (finely chopped)
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp pav bhaji masala
- 1/2 tsp garam masala
- 1/4 tsp black pepper powder
- Salt to taste
- 2 tbsp fresh coriander leaves (chopped)
- 2 tbsp butter
- 1 tbsp oil
- 1 tbsp lemon juice (optional)
- Grated cheese (optional, for garnish)
Recipe
- Step 1: Prep the Boiled Eggs
- - Peel the boiled eggs. Chop 2 of them and grate the remaining 2. Set aside.
- Step 2: Sauté the Base
- - Heat oil and butter in a pan. Add chopped onions and green chilies. Sauté until golden.
- - Add ginger-garlic paste and cook for a minute till raw smell disappears.
- Step 3: Add Tomatoes & Spices
- - Add chopped tomatoes and cook until soft and mushy.
- - Mix in turmeric, chili powder, pav bhaji masala, garam masala, and salt.
- - Add capsicum and sauté till slightly soft but crunchy.
- Step 4: Add Boiled Eggs
- - Add chopped and grated boiled eggs to the masala. Mix and mash well using a spatula.
- Step 5: Scramble the Eggs
- - Push the masala to one side of the pan. Break the raw eggs into the empty side and scramble them.
- - Once semi-cooked, mix them into the egg masala mixture.
- Step 6: Finish and Garnish
- - Cook everything together for a few minutes until well combined and slightly dry.
- - Add pepper powder, lemon juice, and coriander leaves. Stir well.
- - Optional: Sprinkle grated cheese on top just before serving for a fusion twist.
- Step 7: Serve Hot
- - Serve Anda Ghotala with buttered pav, lemon wedges, and chopped onions.
