Prepare Dough:
-Mix wheat flour, salt, and water to form a soft dough.
-Knead well for 5–7 mins.
-Cover & rest for 20–30 mins.
Make the Filling:
-In a bowl, mix mashed potatoes with all spices, green chilies, ginger, coriander, and salt.
-Mix well till smooth and lump-free.
Stuff the Paratha:
-Roll a small ball of dough into a 4–5 inch circle.
-Place a portion of the filling in the center.
-Bring edges together and seal like a pouch.
-Flatten gently, then roll out carefully into a thick paratha (~6–7 inches).
Cook the Paratha:
-Heat a tawa (griddle) on medium heat.
-Place paratha and cook one side for 30–40 secs.
-Flip, spread some ghee or oil, cook until golden brown spots appear.
-Repeat on other side. Press edges gently for even cooking.
🧈 Serve Hot With:
-Spicy pickle
-Chilled curd/yogurt
-A dollop of butter or white makhan
-Chutney or ketchup
