📝INGREDIENTS
For the Dough:
- 2 cups whole wheat flour
- Salt – to taste
- Water – to knead
- 1 tsp oil or ghee (optional, for softness)
For the Filling:
- 3–4 medium potatoes, boiled & mashed
- 1–2 green chilies – finely chopped
- 1 tsp ginger, grated
- ½ tsp cumin seeds
- ½ tsp ajwain (carom seeds) – optional
- ½ tsp garam masala
- ½ tsp amchur (dry mango powder) or lemon juice
- Salt – to taste
- 2 tbsp chopped coriander
- Optional: 1 small onion, finely chopped (adds crunch)
- Ghee or oil – for roasting
👩🍳Recipe
- Prepare Dough:
- -Mix wheat flour, salt, and water to form a soft dough.
- -Knead well for 5–7 mins.
- -Cover & rest for 20–30 mins.
- Make the Filling:
- -In a bowl, mix mashed potatoes with all spices, green chilies, ginger, coriander, and salt.
- -Mix well till smooth and lump-free.
- Stuff the Paratha:
- -Roll a small ball of dough into a 4–5 inch circle.
- -Place a portion of the filling in the center.
- -Bring edges together and seal like a pouch.
- -Flatten gently, then roll out carefully into a thick paratha (~6–7 inches).
- Cook the Paratha:
- -Heat a tawa (griddle) on medium heat.
- -Place paratha and cook one side for 30–40 secs.
- -Flip, spread some ghee or oil, cook until golden brown spots appear.
- -Repeat on other side. Press edges gently for even cooking.
- 🧈 Serve Hot With:
- -Spicy pickle
- -Chilled curd/yogurt
- -A dollop of butter or white makhan
- -Chutney or ketchup
